I've helped Puerto Rican friends cook pigs in those. I'm a vegetarian, so not a pig expert, but they're pretty straight forward, just a big box with fire on top.

Yeah, the inside is lined with metal as well. The episode I watched, they just did a pork roast, and they mentioned doing other meats as well.

The guys I hung out with would use it a couple of times a year, usually Mother's Day and around Christmas, and would always cook a 30 or 40 pound pig with it. It was homemade, a plywood box lined with thin gauge stainless, with a metal tray on top. It didn't have a grate for the coals, they would just build a fire directly on the tray. I saw them use both charcoal and wood, it seemed like wood was preferred, but this might have just been to save money. It didn't have wheels, just handles for two people to lift it, but I've seen wheeled ones used on the street before.

They look pretty effective for being so simple.

HA HA, yeah, I could see where you thought that! Or other terms for a dutch oven. HA

Zero you must be cooking for a crowd? I used to watch the cooking channel while I was at work but I'd always find myself wanting to go to lunch early. I guess the advantage to the box would be no flare ups since the juices would not fall into the flames.

Nah, just a couple people. If I made one, I would not make it that big, prob half that size. Maybe something big enough to accomodate about an 8 lb pork picnic or something. I would also like to make a satay grill similar to this one. Maybe slightly bigger

I use a tiny 14 " grill when we camp out or travel and it always amazes people how much food can be prepared on it. Memorial day weekend I did burgers and hot dogs for 4 kids and chicken wings stuffed bacon wrapped jalapenos for the adults. Consumed a few beverages in the process. I'd like to build a grill station in the backyard next year so I'm looking into a bunch of build info and design ideas now.

Yeah, I have a mini Weber for camping and that thing rocks. Sounds like that was a good weekend! My dad has a perfect area at his house to build one and I keep telling him he should do it!
