flounder ceviche

    step 1: get a boat

    step 2: catch fish

    16 oz dale's pale ale + 16 inch flounder ÷ 4 filets = i cant math

    Step 3:

    mince or cube filets
    mix 1 lemon and 2 limes with a bunch of salt and pepper and stir

    chop 3 green onions
    mince cilantro
    chop one fire a$$ hot dragon pepper from your garden

    put everything in a bowl and mix it
    set in fridge 20 mins
    drain lime and lemon juice as desired
    enjoy

    Very nice! I could go for some of that for lunch today, but I'll settle for left over General Tsao Shrimp my wife made me last night.

    I got into the ceviche thing for a bit, but I got sick of it. Regardless of my problems, looks good Tard!

    Straight down the center and then work your way out to the sides, flip and do the same. Leave it attached near the tail so you can slice the meat form the skin.

    I love ceviche.

    I went out on a charter about a month ago, but I didn't get any keepers ... Searobbins and little guys only. The dude next to me caught a massive skate that the deckhands kept.

    Howz the clarity for the spear there? My neighbor has some luck on the outer banks from the beach. it needs to be flat clear day he says.

    I agree with hanna... visibility is everything, and very difficult to predict with any degree of accuracy. I've been surprised both ways, many times. You just sort of have to be ready when it's good and take advantage of the conditions. Around here, "good" enough for me is about 6'. That gives you about a 12-13' diameter of viz cruising the bottom. But I've lucked into days that it's been 15' of viz, which is awesome. But generally if I can see my spear tip clearly with my arm and gun fully extended, I'll go.

    Bull shark central...good luck with the fish and hopefully no run-ins with any of those beasts.

    I used to snorkel around up there on the back side where it was calm but the water is so brackish and it's just too sketchy for my blood.
